American Style Baked Beans
450g Dried Haricot Beans
130g Onions, chopped
5 Cloves of Garlic
275g Tomato Ketchup
4 tbsp. Maple Syrup
4 tbsp. Worcestershire Sauce
Salt & Pepper to season
3 Bottles Beer (330ml each)
10 Rashers Smoky Bacon
Rinse the beans and soak overnight in a large pot of water.
In the morning, give the beans a good rinse and place in a large saucepan, cover with water and add in 2 bottles of beer.
Bring the beans to a boil and reduce to a simmer for 45-60 minutes, or until tender.
Drain the beans, but keep the cooking liquid.
Meanwhile, chop the bacon, onion and garlic and fry for a few minutes in a pan.
Add in the ketchup, syrup, Worcestershire sauce and season to taste.
Add the beans, stir to combine then transfer to an oven dish and bake in a preheated oven set to 130 °C for 2 hours, stirring occasionally.
After this time, add 165ml of the reserved cooking liquid along with the 3rd bottle of beer, stir to combine and continue to bake covered for 30 minutes.
Remove the cover and bake uncovered for a final 10-15 minutes, or until the sauce is thick.
