Cauliflower Stilton Bake
1 ½ Tbsp. Unsalted Butter
1 ½ Tbsp. Plain Flour
250g Stilton/Blue Cheese
Cut the cauliflower into florets and cook in boiling salted water for 2 minutes then drain.
To make the sauce, melt the butter in a saucepan and stir in the flour.
Cook for a couple of minutes, stirring to cook out the flour.
Gradually add the milk and stir until you have a thick sauce.
Add the crumbled cheese and taste before seasoning with salt and a little pepper.
Preheat the oven to 200C Fan.
Place the cauliflower into an oven-proof dish and pour over the stilton sauce.
Bake in the oven for 20 minutes until golden and bubbling.
Serve immediately or keep warm and pop back into the oven for a few minutes to warm through before serving.
