Fruit cobbler

Ingredients

  • 250g self-raising flour
  • 120g butter
  • 100g light brown sugar
  • 1 egg
  • milk to moisten
  • combination of soft fruit with lots of strawberries!
  • juice of 1/2 lemon
  • sugar to sweeten

Method

  1. Heat the oven to 200C.
  2. Place the flour in a mixing bowl and rub in the butter.
  3. Stir in the sugar, add an egg and then the milk to get a soft dough.
  4. In a saucepan, place all your summer fruit with a small amount of water and a little sugar to sweeten. Place over a medium heat and allow to just simmer for a few minutes until they begin to soften.
  5. Transfer the fruit into a deep baking tray or oven proof dish.
  6. Make several small dough balls (Walnut size) out of the scone mixture and place on top of the fruit.
  7. Bake for 15 - 20 minutes until well risen and golden. Serve with ice cream or clotted cream.
