Asian Chicken and Noodle Salad

Ingredients

  • Cooked chicken
  • 1 pack of cooked egg noodles
  • 1 red chilli, sliced
  • A handful of spinach leaves
  • 4 spring onions, chopped
  • A handful of coriander leaves
  • ½ cucumber, thinly sliced
  • 25g salted, roasted cashew nuts

For the dressing

  • 3cm piece of fresh ginger, grated
  • 2 cloves of garlic, grated
  • Zest and juice of 1 lime
  • Zest and juice of 1 lemon
  • 1 tablespoon clear honey
  • Salt and pepper
  • 1 tablespoon olive oil or sesame oil

Method

  1. Place the dressing ingredients in a small bowl and mix well.
  2. Place the salad ingredients in a bowl and mix well; add the dressing and toss.
  3. Transfer to a salad bowl and place the sliced ​​chicken on top.
