Asian Chicken and Noodle Salad
Ingredients
- Cooked chicken
- 1 pack of cooked egg noodles
- 1 red chilli, sliced
- A handful of spinach leaves
- 4 spring onions, chopped
- A handful of coriander leaves
- ½ cucumber, thinly sliced
- 25g salted, roasted cashew nuts
For the dressing
- 3cm piece of fresh ginger, grated
- 2 cloves of garlic, grated
- Zest and juice of 1 lime
- Zest and juice of 1 lemon
- 1 tablespoon clear honey
- Salt and pepper
- 1 tablespoon olive oil or sesame oil
Method
- Place the dressing ingredients in a small bowl and mix well.
- Place the salad ingredients in a bowl and mix well; add the dressing and toss.
- Transfer to a salad bowl and place the sliced chicken on top.
