Chocolate Cookie Cake

Ingredients

  • 140g butter
  • 110g soft brown sugar
  • 85g sugar
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 300g plain flour
    (or 200g plain flour and 100g cocoa powder)
  • 200g chocolate pieces

Method

  1. Mix all the ingredients together until well combined.
  2. Pour the mixture into a brownie tin.
  3. Bake for 14 minutes at 180°C.
  4. Allow to cool for 5 minutes before serving or cutting into pieces.

Tip: If you use the cocoa powder, you'll get a richer and more intensely flavored chocolate cookie tray cake.
