New Potato and Green Bean Salad

Ingredients

  • 4 Pembrokeshire potatoes
  • 1 cup green beans
  • 1 cup garden peas
  • 1 cup broad beans
  • 1 red pepper
  • Olive oil
  • 1 tablespoon butter
  • 1 clove of garlic
  • sea ​​salt and black pepper

     

  • Optional: bacon bits, chorizo ​​sausage

Method

  1. Put some oil and butter in a large frying pan
  2. Fry the green beans to soften (add the bacon or chorizo ​​if using)
  3. Add 1 crushed garlic clove and a little more butter
  4. Add the garden peas (some are frozen!), the broad beans and the peppers and fry them over a low heat until they have softened.
  5. Stir in the boiled diced potatoes and heat through
  6. Season with salt and plenty of pepper

    Tip: Chili salt can be added for extra flavour

  7. Serve as a vegetable side dish with your favorite meal!
