Pancakes

Ingredients

  • 200g plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarb
  • A pinch of salt
  • 1 tablespoon caster sugar
  • 2 large eggs (separated)
  • 100ml whole milk
  • 150ml kefir
  • 25g butter

To serve:

  • Fruits
  • syrup or honey.

Method

  1. Place the dry ingredients in a bowl.
  2. Add the egg yolk and a splash of milk.
  3. Mix until smooth.
  4. Add the milk and kefir, mix well.
  5. Whip the egg white until stiff and then fold it carefully into the mixture.
  6. Put a little butter in a frying pan, over a medium heat, put good spoonfuls of the batter in the pan.
  7. Cook on one side for about 2 minutes, when you see bubbles appear on the surface, turn the pancake and cook for about 2 minutes.
  8. Serve with syrup or as and fresh fruit.
