Pancakes
Ingredients
- 200g plain flour
- 1 teaspoon baking powder
- 1 teaspoon bicarb
- A pinch of salt
- 1 tablespoon caster sugar
- 2 large eggs (separated)
- 100ml whole milk
- 150ml kefir
- 25g butter
To serve:
Method
- Place the dry ingredients in a bowl.
- Add the egg yolk and a splash of milk.
- Mix until smooth.
- Add the milk and kefir, mix well.
- Whip the egg white until stiff and then fold it carefully into the mixture.
- Put a little butter in a frying pan, over a medium heat, put good spoonfuls of the batter in the pan.
- Cook on one side for about 2 minutes, when you see bubbles appear on the surface, turn the pancake and cook for about 2 minutes.
- Serve with syrup or as and fresh fruit.
