Summer Fruit Torte

Ingredients

  • 150g butter
  • 150g ground almonds
  • 150g plain flour
  • 150g fine sugar
  • 1 egg
  • 150g raspberries
  • 150g blackberries

Method

  1. Heat the oven to 180°C / Gas 4. Place all the ingredients, except the fruit, in a food processor and mix until they form a ball.
  2. Divide the mixture in two and press half to cover the bottom of an 18cm square tin. Place the fruit on top.
  3. Sprinkle some flour on a table and press the rest of the mixture into the shape and size of the tin. Place this on top of the fruit and press it down gently.
  4. Cook the torte for 40–45 minutes until golden and firm to the touch. Let it cool in the tin before cutting it into 16 squares and sprinkling icing sugar on top before serving.
