Hasselback Potatoes

Hasselback Potatoes


  • 6 Medium potatoes, 1 per person
  • A good knob of butter
  • 2 tbsp Oil
  • Salt and Pepper


  1. Wash and dry the potatoes, then place them one at a time onto a wooden soon, this will help you slice through the potatoes.
  2. Using a sharp knife, cut through the potatoes at 3mm intervals, the length of the potato.
  3. Repeat with all the potatoes.
  4. In a large saucepan over a medium heat, melt the butter and the oil and place the prepared potatoes into the pan, spooning over the frothing butter and oil, coating each of the potatoes in turn.
  5. Turn the potatoes over so that the get a good coating and start to warm through.
  6. Preheat the oven to 200C, and move the potatoes from the pan to a baking tray along with the butter and bake for around 45-60 minutes, or until cooked in the middle and crispy on the outside.
  7. Serve immediately.
