Coconut rice pudding
Ingredients
- 800ml x coconut milk
- 75g x caster sugar
- 75g x pudding rice
- 25g x vanilla paste
- 100g x diced pineapple
- 100ml x pineapple juice
- 50g x caster sugar
- 1 x chopped red chilli
- 1 x chopped lemongrass
- 20g x chopped fresh ginger
- 1 x zest of lime
