Apricot & dark Chocolate Nut Bars

Ingredients

  • 1 cup apricots
  • 1/4 cup honey
  • 1/4 cup salted peanut butter
  • 1 cup mixed seeds & nuts
  • ½ cups rolled oats
  • Large bar of 75% Dark Chocolate

Method

  1. Blitz the dates or apricots ( depending on which recipe you wish to follow) in a food processor until sticky "dough" like consistency. Place all the ingredients into the bowl of a food processor, and whizz until it comes together as a sticky ball.
  2. To make the bars - place the mixture on a large sheet of cling film and place into a square plastic container or tin. Press down to firm the mixture, and fill the bottom of the tin and form a square edge. Chill the fridge before cutting into individual bars. Cover each one with a generous amount of melted dark chocolate.
  3. Alternatively, roll small quantities of the mixture to form smaller mouth sized pieces. It may help to flour your hands slightly to prevent you getting too sticky! Roll walnut sized balls in a melted dark chocolate or desiccated coconut & store in an airtight container for up to a month.
