Ingredients
400g self raising flour
10g salt
1 tea spoon baking powder
50g soft brown sugar
3 tsp mixed spice
250g mixed dried fruit, such as raisins, currants, sultanas and cranberries
1 free-range egg
1 egg white
150ml strong breakfast tea
Method
Make a strong pot of breakfast tea and allow to cool.
In a large mixing bowl place the flour, baking powder, brown sugar, salt and mixed spice.
Make a well in the centre of the dry ingredients and add the eggs and 150ml of tea.
Mix well to create a thick batter. If it is too thick add a drop of milk.
Add the fruit and mix well.
Place a heavy bottomed pan on the heat and gently cook each crempog for 2 minutes on each side until it has cooked through.
Serve warm with freshly brewed tea.
