50g white chocolate, chopped - or dried fruit, marshmallows, cherries
Method
Heat the oven to 180°C and line a 20cm square tin with a depth of 5cm
Melt the chocolate with the butter and leave to cool
Whisk the eggs and sugar together in another bowl
Pour the cold chocolate mixture into the egg mixture and fold in gently
Add the flour and cocoa powder, and fold it into the chocolate mixture. Pour into the prepared tin and bake for 25 minutes. Add white chocolate chips. At Christmas time, they look lovely with red cherry preserves. You can even add a little marshmallow – make the recipe your own by experimenting with the final additions.
The brownies are done when the top is shiny and starts to pull away from the sides of the tin.
Cut into four quarters, then cut each quarter into four. Cut each square in half to create triangles. They are rich - enjoy, but don't overdo it!!
