Turn the oven to 190c fan heat. In a bowl, put oil, maple syrup, vinegar, orange juice and thyme, salt and pepper to taste.
Add carrots and place on a baking tray lined with greaseproof paper, then roast for 20 minutes then mix the sugar and orange peel flakes into them - then return to the oven for 15 minutes until it is tender and shiny.
Place in a serving dish and sprinkle with nuts and orange peel flakes.
