Cookies with Chocolate

Ingredients

  • 140g salted butter
  • 100g light brown sugar
  • 100g fine sugar
  • 2 teaspoons vanilla extract
  • House
  • 225g plain flour
  • ½ teaspoon sodium bicarbonate
  • ¼ teaspoon salt
  • 200g chocolate pieces

Method

  1. Heat the oven to 180°C.
  2. Place 150g of softened salted butter, 80g of light brown sugar and 80g of caster sugar in a mixing bowl and mix until creamy.
  3. Add 2 teaspoons of vanilla essence and 1 large egg
  4. Mix the flour, ½ teaspoon sodium bicarbonate and ¼ teaspoon salt into the bowl and mix.
  5. Add 200g plain chocolate pieces and mix well.
  6. Use an ice cream scoop or a spoon to make small portions of the mixture, placing them far apart on the baking trays.
  7. Bake for 8–10 minutes until they are light brown around the edges and still slightly soft in the middle when you squeeze them.
