Cookies with Chocolate
Ingredients
- 140g salted butter
- 100g light brown sugar
- 100g fine sugar
- 2 teaspoons vanilla extract
- House
- 225g plain flour
- ½ teaspoon sodium bicarbonate
- ¼ teaspoon salt
- 200g chocolate pieces
Method
- Heat the oven to 180°C.
- Place 150g of softened salted butter, 80g of light brown sugar and 80g of caster sugar in a mixing bowl and mix until creamy.
- Add 2 teaspoons of vanilla essence and 1 large egg
- Mix the flour, ½ teaspoon sodium bicarbonate and ¼ teaspoon salt into the bowl and mix.
- Add 200g plain chocolate pieces and mix well.
- Use an ice cream scoop or a spoon to make small portions of the mixture, placing them far apart on the baking trays.
- Bake for 8–10 minutes until they are light brown around the edges and still slightly soft in the middle when you squeeze them.
