Fruit Cobbler

Ingredients

  • 250g self-raising flour
  • 120g butter
  • 100g light brown sugar
  • 1 egg
  • Milk
  • Juice of ½ lemon

Fruits

  • 1 pack of frozen fruit of your choice OR leftover fruit
  • 2 tablespoons light brown sugar
  • 2 tablespoons grenadine and orange juice

Method

  1. For the Fruit: Place your choice of fruit in a saucepan and add 2 Tbs sugar to sweeten and a drop of orange juice. Simmer over a low heat until tender and allow cool slightly
  2. Heat the oven to 200°C
  3. Place the flour in a mixing bowl and rub in the butter.
  4. Stir in the sugar, add an egg and then the milk to get a soft dough.
  5. Transfer the fruit into a deep baking tray or oven proof dish.
  6. Make several small dough balls (Walnut size) from the mixture and place on
    top of the fruit. Bake for 15 - 20 minutes until well risen and golden.
  7. Serve with ice cream or clotted cream.
