1 pack of frozen fruit of your choice OR leftover fruit
2 tablespoons light brown sugar
2 tablespoons grenadine and orange juice
Method
For the Fruit: Place your choice of fruit in a saucepan and add 2 Tbs sugar to sweeten and a drop of orange juice. Simmer over a low heat until tender and allow cool slightly
Heat the oven to 200°C
Place the flour in a mixing bowl and rub in the butter.
Stir in the sugar, add an egg and then the milk to get a soft dough.
Transfer the fruit into a deep baking tray or oven proof dish.
Make several small dough balls (Walnut size) from the mixture and place on top of the fruit. Bake for 15 - 20 minutes until well risen and golden.
