Place all the pizza dough ingredients in a bowl and mix until a rough dough forms. Turn the dough out onto the work table and knead it until it is silky and smooth. Cover the bowl and leave to rest for 30 minutes.
Divide the dough into 4 pieces. Take the first piece and pull the edges towards the centre, turn over and shape into a tight ball. Repeat with each piece, then place on a floured tray. Dust the top with flour and cover with cling film or a clean tea towel. Leave for 1–2 hours until the dough has risen.
To make the sauce, mix all the ingredients together in a bowl and set aside.
When the dough is ready, heat the oven to 200°C fan and place a metal tray or baking stone to heat in the oven. Take a piece of the dough and, using your hands, stretch it into a round shape leaving the edges slightly thicker. (To make a heart-shaped pizza, make a small cut on the top and push the dough out to create a heart shape.) Take a piece of baking paper and spread a little olive oil on it, then place the pizza base on top. Spread the sauce over it and add your choice of toppings. Lift the pizza using the baking paper and place it on top of the hot tray in the oven. Partially bake for 10–12 minutes until the base is crispy, the crust is golden and the cheese is bubbling.
Take the pizza out of the oven and drizzle some hot honey or balsamic glaze over it. Cut, and enjoy
