Red Bean and Monkey Nut Casserole

Ingredients

  • 1 tablespoon rapeseed oil
  • 1 onion
  • 3 garlic foams
  • 125g mixed leaves
  • 1 teaspoon chilli flakes
  • 1 teaspoon cumin  
  • 1 teaspoon ground ginger
  • 1 x 400g tin of tomatoes
  • 4 tablespoons peanut butter
  • 400g red beans
  • 1 tablespoon soy sauce
  • a handful of coriander

Method

  1. Heat the oil in a large saucepan over a high heat and add the onions and leave to cook for 5 minutes before adding the garlic and spices and cook for a minute. Place the mixed leaves washed and cut into medium pieces in the pan and cook until wilted.  
  2. Pour in the tomatoes and peanut butter and turn the heat to medium. Add the beans and soy sauce and let cook for about 8-10 minutes.  
  3. Season with salt and pepper if needed and serve in bowls topped with coriander leaves.
