Sloe Gin

Ingredients

  • 500g plums
  • 200g sugar
  • 700ml gin

Method

  1. Remove the stems and wash the plums. Make holes all over the plums using a cocktail stick or a small skewer and place them in a large storage jar.
  2. Pour the sugar over the plums and mix well before pouring the gin over it. Put the lid on the jar and leave it in a dark place, ideally for 3 months. Shake the jar every day for the first week until the sugar has completely dissolved, then shake once every two weeks.
  3. At the end of this time, filter the plums through cheesecloth (muslin) and bottle it. Leave until needed. Serve alone or with tonic, or to make a "sloe fizz" add 25ml gin and top up with sparkling wine.
