Christmas Cookie Sandwich

300g Salted butter

130g Caster Sugar

210g Light Brown Sugar

2 Eggs

1 tsp Vanilla

500g Plain Flour

1 tsp Bicarb

250g Small Marshmallows

130g White Chocolate Chips

Jam

Mix the butter and sugar in a bowl until the mixture is light and fluffy.

Add the eggs and the vanilla.

Slowly, mix in the dry ingredients with the butter.

Measure the dough into 45/50g balls and place on a baking tray leaving enough space between each ball.

Bake at 170c for 6 minutes. Take them out of the oven and press the cookies down with the bottom of a glass to make them flat before putting them back in the oven for a further 5 minutes. Remember to ask an adult to help you with this step.

Remove from the oven and press down on them again.

Put a layer of jam and butter icing between two cookies to create a sandwich and decorate the top as you wish.
